Valentine's Cookies-1st Attempt

So, we have a tradition of making sugar cookie cutouts at our house for pretty much every holiday(or any other excuse we can come up with).  We love to cut out cookies!  Well, this year we're doing gluten free sugar cookies and I thought we'd try some new recipes.  Our first recipe was from Elana's Pantry for gluten free almond flour cookies.

These taste wonderful.  Maybe just a tad dry, but really a great cookie.  Our problem was that they really like to crumble.  You cut them out from frozen dough which works really well, then bake.  When taking them off the cookie sheets they fell apart.  Still taste really good, but I think we only got about 10 that stayed intact the whole time.  We did not try to decorate these as like I said they were very fragile.

Recipe(from Elana's Pantry) for Valentine's Cookies:

3 cups blanched almond meal/flour
1/2 teaspoon salt
1/4 teaspoon baking soda
1 pinch nutmeg(I also added a bit of cinnamon)
1/2 cup melted coconut oil
1/4 cup agave nectar
1 Tb orange rind

Mix the dry ingredients together.  In separate bowl, mix together the wet ingredients.  Slowly stir the wet ingredients into the dry ingredients until all mixed in.  Separate dough into two balls.  Place one ball ontop of a piece of parchment paper, top with a second sheet and roll dough out to about 1/8 inch thickness.  Place in freezer for 30 minutes.  Do the same with the second ball.  Remove from freezer and cut out heart shaped cookies.  Bake at 350 degrees for 5-7 minutes.
